Single O has been sourcing, sampling, cupping, roasting, measuring, calibrating, tweaking, blending and tasting since 2003.

It’s likely the copious coffee consumption that fuelled them to grow from a cafe to roaster and coffee industry ringleader, but they’ve definitely not been idle. They’ve expanded to Carriageworks Farmers Markets, set up a roastery & tasting table in Tokyo, co-hosted the 2018 World Aeropress Championship (one helluva party) and this year, unveiled a world-first batch brew on-tap prototype at their newly remodelled Surry Hills cafe.

They try to source ethically and environmentally sound beans, products and produce. Recent projects that have seen them rally to shine the spotlight on coffee’s future include No Death to Coffee with World Coffee Research and the recent Pura Cepa Uganda innovation project.

They have a rocking team of people with a love of their craft, a palate for quality and a penchant for fun. Their door is always open to coffee crazed passionate people, great beans and new ideas.

The blends selected by Single O for the December edition of Discovery Coffee Subscription are SUGARPLUM and KILLERBEE

SUGARPLUM Bottoms Up! Edition

Boozy blackberry, plum wine, candied fruits, spice cake

Sugarplum is their longest running limited seasonal blend. They’ve dubbed this year’s edition “Bottoms Up!” not only ‘cause it’s an exceptionally quaffable brew, but also because it’s their way of toasting all their brilliant producers, partners & customers & the decade just gone.

As democratic as they are caffeinated, this blend was the result of an all staff vote. Towards the end of each year, they select from a delicious shortlist of Christmassy concoctions that are carefully crafted by the roasting team to taste like liquid Chrimbo (with common notes of spice, candied fruit & all things nice & with a yearly twist applied).

The clear favourite blend of the bunch and the 2019 edition is a combo of Basoga Fermentum Naturalis, from the Pura Cepa project in Uganda and Nyeri, Kenya. Meaning you can serve up Bottoms Up! knowing it’s the certified best blend of the year.

RECIPE:

Robur/Mythos: 20.5g in/ 53g out/ 23 sec

EK43: 20g in/ 55g out/ 25 sec

KILLERBEE

Honey, tropical fruit sweetness & creamy body

Killerbee is their all year round blend, suited for sweet tooths, black & milk-based espresso drinkers and ideal to be sipped with a pastry alongside.

This blend is a combo of origins, respectively from Huehuetenango GUATEMALA, Kasama ZAMBIA and Veracruz MEXICO. The region of Huehuetenango, in particular, generates a considerable (well justified) buzz:  widely considered the most famous coffee growing region in Guatemale, the combo of super high altitudes, cool days and colder nights means the coffee’s ripening is sloooowed. This translates into a noticeably sweeter cup that is the bee’s knees.

RECIPE:

21g in / 41g out / 30 sec
